This fermented cashew cheese starts with pure, raw cashews. A sprouted rejuvelac handcrafted from organic buckwheat groats (remains gluten-free) is then added which causes the mixture to rise. We top it off with some organic lemon juice, nutritional yeast and a pinch of salt.
The result? A creamy, savoury and spreadable cream cheese that is to die for on a bagel. We sometimes mix in some more lemon juice and a touch of maple syrup for a phenomenal cream cheeze icing. We've also been known to mix it in with cooked pasta as a base for a vegan alfredo! Definitely a family favourite.
